Chili Egg Puff - soooo good.

CHILI BAKED EGG PUFF


1 piece: 376 calories 30g protein (fairly accurate for the basic recipe – more calories if you add meat to your recipe)

Quick to prepare...you can even assemble it the night before and bake it in the morning.


Ingredients

· 10 eggs

· 3/4 cup flour (at low altitude? ½ cup will do

· 1 teaspoon baking powder

· 1 /2 teaspoon salt

· 1 pint small curd cottage cheese (2 cups)

· 1 lb monterey jack cheese or shredded mixed cheese

· 1/2 cup butter, melted

· 2 (4 ounce) cans chopped green chilies (oh boy, do they make the dish. They aren’t hot, it just adds richness)

Directions

1. Beat eggs.

2. Add dry ingredients, cottage cheese and shredded cheese.

3. Add melted butter and chilies.

4. Pour into “well-greased “ 13x9 pan ( I spray mine with cooking spray)

5. Bake at 350 deg. for 40 minutes

6. Let stand for a few minutes before slicing and serving


Note: Precooked sausage, ham or bits of bacon are good in this, and

so are sauteed mushrooms or slivers of sauteed peppers...OR...you can even go Southwest” and add a layer of cooked taco meat and black olive slices to the baking dish before you pour in the egg mixture. If you do this, be sure to drain the meat and olives well.
